Hunter Cured was established in 2015 by NZ Salmon. Managing director Nicole Kroef identified the opening in the market for uniquely flavoured infused cured salmon and engaged Chef Ebonnie Newby-Singh to work alongside in creating amazing flavours including Vodka & Beetroot, Orange Basil & Pimms and Citrus, Star Anise & Dill for everyday enjoyment.

Using only the best New Zealand King salmon fillets, the salmon is infused with flavour and cured for 48 hours with rock salt and refined sugar. Once the curing process is complete, the fillets are washed and dried and further rested for 24 hours prior to be being sliced and packaged by hand.

The process from start to finish can take up to 80 hours.

Hunter Cured is not only a healthy product, containing less than 1g of sugar, but all ingredients are sourced locally from the Newcastle City Farmers Markets.
